Start by searing the chicken in a hot pot with butter.
Heat oil in a pan, then add onion, garlic, onion and some herbs and sauté them.
Pour in some chicken broth and scrape up any bits for added flavor.
Cover the pot and let it simmer until the chicken is cooked through.
Once cooked, finish with a squeeze of lemon and a sprinkle of fresh herbs.
Serve Garlic Chicken with rice, mashed potatoes, or a side salad.
